We joined the Instant Pot revolution last Sunday. Here is a run-down of the recipes we’ve tried, in the order we tried them.
- Beef Stew. I deviated from the recipe by using a whole can of tomato paste, and by skipping the wine and parsnips. I also substituted chicken broth for beef broth. It turned out great and we’ll definitely make it again. Easiest beef stew ever. âœâœâœâœâœ©
- Chicken Yum Yum. Obviously I used butter instead of ghee, because I am not a paleo-maniac. This ended up being a decent honey glazed chicken, served as suggested over roasted cauliflower. âœâœâœâœ©âœ©
- Lemon Garlic Chicken. I didn’t read the recipe closely enough and dumped an entire bottle of lemon juice into the pot. So it turned outÂ insanely lemon-y. I won’t make that mistake again! Â âœâœâœâœ©âœ©
- Mongolian Beef. So good…butÂ very salty. Next time, I’ll use a lot less soy sauce and a lot more water. But the kids enjoyed it, so this one is a keeper.Â âœâœâœâœâœ©
